For me, playback starts virtually instantly every time.
Are you working with a massively long track (many hours duration)?

Audacity "should" be able to handle hundreds of tracks, subject to the capability of the computer hardware. However, it rarely gets tested with hundreds of tracks, so there could be bugs that we don't yet know about. If it works OK with 100 tracks, then perhaps you could work with batches ...

It's normal for Audacity to use CoreAudio on macOS. Macs don't have "MME".

That can happen if the computer is busy doing other things. The Windows Task Manager can show you what is running, and give some idea of the amount of computer resources are in use.

You could create an Audacity project that contains all the parts of your Podcast that are the same for each show.
When you add the unique bits to it, ensure that you "Save As..." to give it a new name without overwriting your "template" project.
