The simplest way is:

1. Select the audio that you want to export.
2. "File menu > Export > Export Selected Audio..."

Normally, I just use the Tracks menu to mix the stereo tracks to mono. Just recently however, every time I do this the mono track is raised in pitch by about a semitone.
