If I select the name, then I can right click and select "Copy".
The "Command + C" shortcut does not work.

I don't think that IMA ADPCM is a valid encoding for AIFF format. Are there any programs that support this combination?

Check first that the Mac sound system recognises the device. Once that is working, launch Audacity and select the device in the device toolbar.
