Changed the bit rate from constant to variable, seems to have done the trick.

Chaps, Thanks for the responses. I tried exporting to WAV, and as expected it sounded great. I then imported the WAV into Audacity then exported again into MP3, which saw the return of the fuzzy guitar that wasn't there on the WAV. I'd obviously like to be able to get the decent sound in an mp3, as ...

Well with my electric guitar plugged into the 'instrument' input, or my mic plugged into the 'mic' input, I get really good results, in terms of quality of sound and useful level. I think maybe it was just clipping. I'm just surprised I'm noticing it with only 2 instruments playing. I would have expected to distort more with several loud distorted electric guitar tracks, not with just acoustic guitar and drums. I also think that the drum output I'm getting is a bit too 'hot',...

A louder signal usually has the opposite effect... A louder signal gives you a higher signal-to-noise rat...
