It depends on what mixer you have and what controls there are on it for each channel.

If there are "Pan" controls, then you can pan the guitar completely to the left and the voice completely to the right, and they will end up separately on the left and right tracks.

This is a known bug in 1.3.10, where each track is extended by up to 5 seconds on Export Multiple.

It is fixed in 1.3.11, and Export Multiple will work properly.

You can rename each track.
Open the dropdown box at the top of the track panel (where it says "Audio Track" or "Stereo Track") > Name... and give it any name you want.

There should be nothing in the new version of Audacity which would cause that kind of difference in quality.
