Default behaviour of the Record button is now append-record.
If you want to change that to 'record on a new track' go to Recording Preferences and check "Record on a new track".
Or hold the shift key while you click the record button, or do Shift+R to begin recording.

Just drag them into the Trash. Re-installing Audacity will not get rid of them.

If you're running the latest Audacity (2.4.2) you can click on the recording level meter (where it says 'Click to Start Monitoring') to monitor the sound before you start recording.

Check the Transport > Transport Options menu and make sure that Sound Activated Recording is not checked.

I'd try Tools > Reset Configuration. This will reset the theme from Dark to Light (and reset many other preferences), but that's easy to remedy.
