So weird. No kidding! The result of the experiment suggests that Rekordbox is doing something strange with its audio output that prevents it being recorded. I am using the Super USB Cassette Capture with a usb cable going into my MacBook Pro external port usb adaptor. I'll bet that device shows up in Sound Preferences as "PnP USB Audio Device" or similar. "PnP" is the key. Those devices are notorious for failing to maintain a USB audio connection on Ma...

This page on the Audacity wiki has instructions for setting up Soundflower in order to record system audio in Audacity.
You may also want to check out Blackhole, which is known to work with macOS 10.15. They have instructions on their Github page for using Blackhole with Audacity.

Are you talking about the Amplify effect? The "Amplification (dB)" field will be greyed out if the peak amplitude of the selection is already 0dB.

A possible enhancement to the software would have non-adjustable input levels cause the input level control to grey out. Audacity is a slave to the computer it is running on. Since macOS shows an enabled input level control, so does Audacity. Some USB devices (mostly microphones, in my experience) ...

What is the make and model of the cassette deck? After connecting the cassette deck to your Mac, go to Apple menu > System Preferences > Sound > Input. Do you see the cassette deck listed there?
