The further the microphone is from your mouth the more the room acoustics will come into play, both noise sources and echos. If you are recording in a reasonably quiet space there shouldn't be any problem putting the mic over your head just out of frame, but if your room has large reflecting surface...

I realized this morning that there is another possible cause of your asymmetric waveform from the deck -- badly magnetized playback heads. Do you have a suitable head degausser?

One test you can make: Reverse the left & right connections at the tape deck, and see if the problem follows. The eleven rack appears to normally come bundled with a copy of Avid pro tools, you may want to use that and not Audacity at all.
