I think I can see where the problem is, but this is a pretty weird effect. Try this modified version - it's not exactly a "fix" for the problem, more of a "hack" to see if I'm looking in the right place. Yes that's much better: the artifacts are a fraction of what they were ... ...

The cable didn't even have an enclosure for the A/D converter electronics!! Even I wonder as to if that cable was supposed to work with a guitar or not!!
