See if the "Software playthough" box in Audacity Preferences is ticked, if so uncheck it to see if that makes the echo stop.

You could try positioning the headset-mic further away from your mouth , and/or wrap some foam around it.

An alternative to using amplify with a negative value, is to use Audacity's envelope tool to lower the volume of parts
