Unless you saved the EQ you applied as a preset in the equalizer,
then Audacity will have forgotten it after you closed the project.

I can't record a second track (overdub) without the sound from the first track I recorded coming through and being recorded on the second track along with whatever I'm trying to record ... Software playthrough is unchecked. If software playthrough is unchecked, then the mixer is providing the route...

Audacity will extract ("rip") the audio from some videos if FFmpeg is installed into Audacity.
Then you will need video editing software to make a version of the video with the audio modified in Audacity,
