Skype (or similar) is another thing than can apply live noise-reduction / echo-cancellation, even if you didn't ask.
( I don't speak Mac so can't tell you where to look for those unwanted audio enhancements on your computer ).

Can someone please explain to me why this file sound like it's muffled or I'm underwater? ... DCChapt1.mp3 (1.29 MiB) IMO the whistling distortion on that is not reversible. Possibly some sort of extreme noise-reduction / echo-cancellation has been inadvertently applied by the MacOS. ... I did go t...

Try changing the Audacity project-rate from the default 44100Hz to 48000Hz before recording.

Your question has nothing to do with Audacity. :? You need to connect one of the two headphone sockets from the piano to the interface input. It's unclear whether you can use a guitar-type lead with ¼ inch mono ( TS ) plugs , or will require a stereo lead ( TRS )... text says stereo, but illustratio...

I don't know of any way to removing the digital compression artefacts.
(cf. There's no way back from a pixelated image to the high-resolution original).

Dial-in plenty (30dB) of treble boost.
BTW the phone they're using does not have anything above 4kHz,
so anything above 4kHz is artefacts which should be filtered out.
