The sound on Youtube is likely to have been heavily compressed already (and therefore audibly "damaged"). When you import or record that sound into Audacity you capture the damage. When you then export as an MP3 you apply MP3 compression a second time and add further damage to the captured damage - ...

One point that hasn't been clarified: do you hear the same sound "movement" when you play the Youtube videos in Youtube and when you play the Powerpoint presentations in Powerpoint? If so, the problem lies in the original source material and not in your hardware/software setup.

Were these tracks recorded via line-in (e.g. keyboard) or via an open-mic recording? If open mic, were they all recorded in the same room on the same day? If you discover that the real problem was on the original tape cassette recording, you can, after recording the tape into Audacity, try recovering the volume level by using the Envelope tool to selectively increase the quiet parts. It may not be perfect but it's worth a try.

I'm a Windows user so treat what I say with appropriate caution. I have my LAME and FFMPEG libraries stored in the same place rather than in different places. Have you tried putting your FFMPEG libraries in the same place as the LAME libraries?
