Apologies, I was getting devices and channels mixed up.
Adobe audition can do exactly what I want, it seems, so I'll be getting that soon. Thanks for your help.

In the Audacity preferences, I can select different devices to record from in the options, and I have a pretty list, which includes my 4 virtual audio cables.
