Your question and title don't match.
There's a setting which either causes a new track to start under the old track -or- puts the new performances at the end of the old one. And any minute I'm going to find it. You want the setting that stacks them top to bottom.

I am getting a terrible lag - I guess it is latency. Machine latency. You should plug your headphones into the Scarlett, not the computer. The computer headphone system is always going to have "one computer late" delay and echo and you can't stop it. The Audacity latency setting is Record...

You should probably be aware that Voice Memo runs with its own internal noise reduction. That's one reason I use the separate Music Memo which doesn't do that. So even if you do move the sound files, Audacity will be piling two different noise reductions atop each other. It's easy to get honky, bubb...

Live recording session? That puts you in the Export WAV camp.But now after each session I will additionally save the project to an external hard drive.

Here's first pass. I added Effect > Echo: 0.1, 0.5 > OK to both. On the second one, I also applied Effect > Distortion > Leveler. Settings attached.
