There are two Vocal Removals. The legacy one and the newer Vocal Reduction and Isolation. Did you try both?

But to get the simple one out of the way, did you plug in the turntable after you started Audacity? Audacity checks for connections when it starts. Restart Audacity with the turntable plugged in. Does that help?

With digital recording, your digital levels are not that critical as long as you're not clipping. And as long as you stay digital. I have searched the forum from top to bottom and all I can see is recording with 6.5mm to 3.5mm jack. I wouldn't do that, either. I use the headphone jack of my Yamaha to a Behringer UCA-202. The Official Party Line is to record with occasional peaks in the -6dB to -10dB range. That works out to blue wave tips between 50% and 30%.
