You may have pressed the green "full screen" ball in the Audacity upper left. Put your cursor/pointer at the top of your screen and leave it there. The Mac control bar should appear and you can press the green ball again to shrink the window.

I'm with the wired headphones people. Wired headphones are safe, stable, and you can use them for troubleshooting and quality control. Throwing bluetooth into the mix scrambles the sound pathways (as you're finding) and introduces instabilities, poor reliability, and time constraints. Post back if y...

Without knowing any more than that, I'd say Audacity was recording your computer microphone and not the formal data stream. Check what's listed in the little Audacity microphone (recording) window. Audacity is an audio editor. People get into trouble when they use it for other jobs. If it's a toss-up between strict scientific accuracy and sounding good, Audacity will almost always pop for sounding good.
