Don't "save" it.
Export the performance as a WAV file.
Open it up in iTunes, make it (them) into a playlist, and burn your brains out.

I"m betting a lot of chocolate that the MP3 compression scheme doesn't know how to deal with multiple mono tracks in the same performance, and even if it did, I'll bet even more chocolate that the LAME implementation of Fraunhofer doesn't support it. You need to cut and paste the tracks into on...

MP3 is not one "thing." It's suite of compression tools that you can tune for best results. If you pay Fraunhofer the Big Bucks for a commercial MP3 compressor, you will get many sliders and filters and tuning tools. The free Lame/Audacity version only has one tuner, the bitrate under Auda...

The tapes are normally in stereo.
Audacity, however, defaults to mono when you first install it. Go into Preferences and make sure it's set to stereo. Some installs make you restart the program before the setting "sticks."

If you load a six-second piano performance and zoom in 12 times, you can see the actual points on the waveform that the A to D used to capture the song. I tried it on a six second piano trill and the pause and stop continued to work. You're zoomed in enough to see the sample points on the waveform, right?
I'm on the Mac version of Audacity. When it cools off a little, I'll bring up one of the PCs and try it there.
