Audacity wakes up from its first birthday in one channel Mono. Change in the Preferences Control Panel--different slightly on different machines.

Audacity isn't a very good program for standards conversion IMHO. I would be doing this in QuickTime Pro($). Simple Import/Export. Other Windows programs may apply. I don't know of any free ones.

A bit harder on the Mac. I use WireTap Pro which will form a sound file from anything playing on your machine. Another advantage is WTP has a scheduler and will let you record unattended web shows.
