iTunes will not burn music to a disk. What. iTunes burns Playlists to a disk. You need to create a Playlist with your song in it and iTune should burn that will no trouble. File > New Playlist. When you see it created on the left, drag your music over to it. While it's selected: File > Burn Playlist...

Please tell me you have a deskside PC and not a laptop. If so, you appear to be over half-way there. It would be good to know the model number of the turntable so we can look it up. The reason neither Windows nor Audacity got rid of the _DATA folder and its contents is that it's not part of Audacity. It's part of your show(s). Audacity creates that folder when you Save Project As... . You can't have Windows destroy all your spreadsheets just because you deleted the Excel progra...

No doubt in Final Vinyl you captures a passage from the record and saved it, right, and then pushed the saved file into iTunes?
You can't do that in Audacity. You capture the work as normal, but then you need to Export As WAV... to get a stand-alone file for iTunes.

Do you have either Hardware Playthrough or Software Playthrough selected in Audacity > Preferences > Audio I/O?
