Did you pick "English" the first time the program opened? This kind of thing happens what that system gets scrambled.

Don't delete any original capture clips. Audacity 1.2.x might still be standing on them. Just a thought.

Phonic seems to make about a hundred different mixers. Which one have you got? If GarageBand can see it, then OS-X can see it and the company is right. You probably downloaded the wrong one. Everybody does that. Make sure you know which version of Audacity you have and which processor then read this:

There's no shortage of trouble with USB audio devices. What happens if you complete your capture and logging and disconnect the Edirol and restart the Mac? Do all the problems suddenly go away? You might try downloading the 1.3.x version of Audacity. You can install both, but only run one at a time....

That "Janitor" thing is interesting. Because of the UNIX running behind Mac OS-X, a machine is completely self-contained and self-maintaining if you never turn it off. If your machine is running and completely alive (not sleeping) between the hours of 0100 and 0500, you don't need Mac Jani...

You don't need the Slash and Burn technique. You can make Audacity start over at First Birthday by trashing its preference file. I believe that option only appears on the latest unstable version of Audacity (1.3.x) and it will appear on the new release version 1.4.x.
