One more note. Audacity defaults to WAV files. Almost all Apple programs accept them just fine, including QuickTime, iTunes, and GarageBand.

I would not be using condenser microphones. They are totally the wrong mic for a high sound environment. Dynamic microphones are very difficult to overload and perfect for this.
