You can simulate that in post. Put the whole service on one timeline and select chunks every inch or so down the performance, adding labels as you go (Apple-B). That's it.
When you save a Project, Audacity makes a record of where your sound clips are. If you move them, you lose.

That's good to go with. I use the numbers 300 to 3000 because they're easy to remember, but the real numbers are much closer to his. Voice transmission may not go higher than about 2400 because 2600 is the pitch that telco management signal tones use. Manipulating tones at 2600 will cause odd things...

Disks aren't that much louder. You have something else wrong. Your cartridge is a high-output (almost certainly) moving magnet cartridge.
