I know this doesn't mean much, but I just made a recording of 30 stacked top to bottom tracks on my Audacity 1.2.5 on a Mac Mini. I just kept pressing record and stop. Audacity is a post production tool, not a real-time processor. However, if you are willing to produce the tracks ahead of time, you can put the whole day's music on the timeline and use the envelope tool (tool case on the left) to change the volume as the day goes on.
