If you were editing when Audacity crashed, then the AU files are going to be out of order. A new set of files is generated whenever you create a special effect. The AUP files could be referencing files in the capture buffer location rather than the _DATA folder. See Audacity Preferences > Directorie...

You may be overloading the microphone. If you had electrical interference, I would expect the spikes to be all over the place, but they're not. Each spike is on a musical peak and it always happens on negative peaks and it always generates a positive spike. I bet if you backed off from the microphon...

I can tell you what your first problem is going to be. Because Audacity doesn't place leading zeros, the files aren't in the order you think they are. The next file after 0001 is 0002. The next file after 1 is 10.

Make a really short recording of nothing or whatever's connected. It's not important. Make sure it actually tries to make a mono recording. Close the record...

No. Classic Normalize will not go higher than "zero" on the dB scale. Amplify allows clipping damage (although the actual waves will still not go over 0).
