If you open up the MID file, doesn't it play by itself? So what you really need is a program to record the Mac output while the performance is playing. What kind of project needs AIFF? Apple perfectly supports WAV in most if not all of its programs.

If you click and hold inside the timeline--the blue waves--and drag sideways, that portion of the song will change color. That colored section has been "selected."

What's going on is you're directly managing the AU files. Only the AUP file is supposed to do that. The AUP or Audacity Project Manager deals with lining up all the little AU files and produces the graphics. If you have no AUP file, you have no show. OK, that's different. iTunes files are also protected under the FairPlay Rights Management System.
