One other trick. You don't have to press Record in Audacity to see what the levels are. You can click once inside the red record meters and they will wake up and show you the levels.
It's one of Audacity's built-in diagnostic modes.

Just because I'm compulsive about this, you are not plugged into the "headphone" connector. Chances are, you're plugged into the Mac Line-In which is the connector labeled the little black circle and two black arrows pointing in. Given that, you are recording your built-in microphone, not ...

The file "audacity Preferences" will not appear on a search for "audacity," but it will appear on a search for "audacity Preferences" or the star wildcard "audacity*". But now that I know the secret, it does show up on a search for "audacity." I love...

I can ask one of the Systems Operators here at work. One or two of them are really good with Macs.
Didn't we solve this explosion and focus thing like weeks ago? I need to go home to really test this stuff. Occasionally, they need me to do actual work.

Look at the instructions and see if the preamp is rated for a moving coil cartridge. There are some serious level problems with those and at least in analog land, they take special preamplifiers. You can apply Effect > Amplify to your songs and bring them back up to normal, but they will be noisier ...
