If you have two capture programs running at the same time on the same computer, I would expect one of them to misbehave. I think what you have now is normal (which is why you can't fix it) and what you had then was an accident.

You may be recording too many pathways with a delay between them. Windows is good at that.

Nope. Audacity sees one USB connection as one Sound Device. Audacity only supports one.
The up side to all this is Audacity directly supports up to 16 tracks of audio if you can figure out a way to get them into and out of the computer.

Contact the manufacturer. Don't bet the farm on finding one. You bought a throw-away turntable. I recently paid for a cartridge and stylus for my high-end turntable what you paid for the whole turntable.
