That's because iTunes doesn't use MP3. iTunes native music format is AAC which Audacity doesn't understand. See if Super or Switch can convert for you -- or rip the original CD in cdex. Check out the Audacity Preferences; Quality or Audio I/O. Audacity 1.2 wakes up at first birthday in 44100, 32-floating, Mono. Change to 44100, 16-bit, Stereo. Restart Audacity after you do that.

If you have your edit open, Export As WAV to produce a stand-alone sound file.
You can put a label at the beginning of each song (Control-B) and Export Multiple. That will give you several WAV files -- one per song -- that you can re-arrange in Windows Media before you burn your Music CD.

It's usual for all the recording sources to go to a control panel and give you the ability to adjust the volumes.

While the composite is on the timeline, Press Control-B at the beginning of each song. That will set a label. We are talking about Audacity, right? Did somebody try to sell you the program?
Audacity 1.2 comes free with many USB turntables, but that doesn't work any more if you have a modern Mac.
