You might have another problem as well. High recording volume shows up right away and that's not what you have (well, maybe some of that, too). Yours gets louder as you go. You're running a newer Intel Mac with 10.5 or later, right? You have the wrong Audacity. Trash the Audacity application and dig around until you find the Preference file. It changed depending on Audacity version. Trash Mac Audacity Preferences http://audacityteam.org/forum/viewtopic.php?f=13&t=8...
