You can delete the shortcut in the dock along the bottom. That doesn't delete the program. Go > Applications > Audacity (depending on how you installed it) and drag a new copy down to the dock.

Any reason you're not placing the microphone opposite the hole? The strings don't generate the air movement, the body and hole does. USB microphones are low. They have to be because they have no sound mixer to adjust levels during the performance, so they have to never overload. Overload and clippin...

We can't tell from the posting what the problem is. Audacity used to work just fine and one day you lost your show? New live performances stopped recording? You saved your work and it vanished?
