First layer of this...you don't drag the Disk Image (.dmg) file to Applications. You double click it and it will mount a "fake" hard drive on your desktop. You open that and follow the instructions -- usually drag the Audacity program into your applications folder. But don't do that... Yet...

Assuming they all open up in Audacity, you can use Effect > Amplify on each one before you mix them together. That's the quick and dirty version. We still got pieces of this unresolved. Which Audacity are you in?
In 1.3.7, it's not necessary to select or highlight the track for Stereo To Mono Track to work.

How Many Audacitys?
You can safely have Audacity 1.2, 1.3, and 2.0 on your machine as long as you only use one at a time. Audacity Projects will not open in earlier versions.

The only option in Audacity 1.2 is to press Pause instead of Stop during a recording. Then you can un-pause it and continue on.

This generic problem is pretty common. Whenever Windows sees a USB Sound Device plugged in, it will many times try to assign all sound services to it instead of just recording. So it's trying to send your music performance back out to the guitar instead of the computer speakers. I own a sound device...
