Just so we're clear. You record vocal and the guitar sounds distorted. Stop, Edit > Undo, and do the exact same thing again only this time it's clean? Can you try that next time it does it? Normally, any time you press Record, Audacity starts a new track.

Broadening the scope of the question a bit. Why are you doing this? If your purpose is to do production, sound manipulation and editing, then MP3 is the last thing you want. The sound card and the operating system have to both support What U Hear. Without either one, it's just not there.
