Apple > System Preferences > Hardware > Sound > Input. Make sure the USB headset or USB Device is selected there instead of the Internal Microphone which it sounds like you have. Make sure the blue sound meter kicks when you talk.

If everything is turned up and you still have low level, you may like applying Chris's Compressor. That's what I use to easily make internet productions louder without serious distortion or damage.

Your machine may have crashed at the export step. How did you stop the capture session? You got to the end of the interview and said thank you and then what buttons did you hit?
