Most USB devices like this run 44100, 16-bit, mono. It's the mono part that usually kills people. Unless you have an odd one, these devices are not Stereo.

There is another step that might help. I don't use Audio/Midi setup for the first pass. I go into Apple > System Preferences > Hardware > Sound > Input and see if I can get the little blue sound meter to work. Without that, the rest of the machine has no chance.

If you do catch serious oddities in 1.3.9, you can back up to 1.3.7 which I still use day to day. 1.2.5 is unsupported on new Macs. Do you like to put dates in your filenames? Bad idea. Dash and Underscore are the only two punctuation marks allowed in filenames. Those two, upper and lower case letters and numbers. That's it. No other marks.

That's not going to cure all your problems. If you horse down on your guitar with a good energetic strum, the pickup will deliver a signal way, way, way too powerful for the average computer Microphone Input. I suspect you're microphone connection is trying to protect itself from the hot sound level...
