Hiss is difficult because the tools can't tell the difference between the interference and your voice pronouncing sibilants. SSisster SSuzy SSits SSerenely... That and the Noise Removal in Audacity 1.2 is a concept experiment, not a working tool. You can get much better noise removal in Audacity 1.3...

Audacity default bit depth is 32-bit floating, not the much more common 16-bit. Change in Audacity preferences and then restart Audacity.

You can convert your existing show to 16-bit.

Depth Conversion
-- Track Name > Set Sample Format > 16-bit PCM

Two steps. Finish editing your show and File > Export As WAV. Call it something with upper and lower case letters, numbers, dash and underscore. In Audacity 1.2 you change the MP3 exported bit rate in the Preferences. Restart Audacity after you change it.

32 is the minimum for a mono show.
64 is the minimum for a stereo show.
300 and up is very nearly (but not quite) perfect.

The short answer is no. Macs don't support Hardware Playthrough (Audacity > Preferences) and Software Playthrough is seriously late -- usually too far off time for live music. Audacity is a complete slave to the computer that's running it. If the computer can't see the recorder or the sound files, Audacity will never see them, either.

No plugins.
