Reading that slightly differently, it's possible to apply a custom curve to your already captured show later that day in post production. Audacity will not apply effects during a capture.

PCM from a DVD should be 48000, 16-bit, Stereo. That's non-surround television sound.

What happens if you open it up in QuickTime Player and press Command-I for INFO?
If you had QuickTime Pro, you could export it straight from there.

That would be a problem with your display or display driver. It's not a shock that drivers do not catch up with a new operating system for a while. Keep haunting the manufacturer's web site for updated video drivers.
