I prefer to use at least two mics on an upright piano However, don't rush out and get a second USB microphone. Audacity will only record from one. Do I record at a lower volume by manually turning the volume knob down on the microphone That's my guess. Try it. Consult your instructions. I recorded a bunch of chapters It's possible to submit a short voice test to ACX to make sure you're not burning permanent, fatal errors into your chapters. It's not obvious you can do that from the published instructions. That can save a lot of work. "I spent months reading my book....."...

Sometimes it still works on very small files (two minutes or so), but never on larger files. That may be the hint right there. ACX Check has to load your work into free memory to do the analysis. It appears that my ASUS laptop has a headphone jack receptor that's about 1/8 inch. In case we missed the boat here. You can't use the laptop sound to listen to yourself perform.
