Another note, Macs have no internal capacity to record themselves like most PCs do. When you were recording the bad audio, you were recording the built-in microphone. If you had a dog barking, you would have gotten that, too.

Total Recorder is an automated recording package that can be formatted to do a lot of these tricks on Windows. It's a money-based solution.
I think Audacity 1.3.11 can be configured to start and stop. I don't know if it can be configured to start and stop and start and stop.

Throw the first one on a track (File > Open), End the cursor and Import the next one. Lather, rinse, repeat. In each case, Control-F to make visible the full show on the timeline. Export as MP3. Pure statement of fact. When you install Audacity, it wakes up the first time (first birthday) all set for maximum visibility of edits, sound manipulation, and effects management, not analysis.

Before we go too far with this, I don't know the format of an audiobook, but a Music CD can only hold 79:30. Just under 80 minutes, no matter what. It should be right there in the regular folder and be named something.bak. There is one other reason you could have a hole in your Project. Oh, and I would not be doing any of this in Audacity 1.2. Download and start using Audacity 1.3.11.
You can install both versions safely, but only use one at a time. Audacity 1.3 projects will not open in 1.2.
