FireWire? Are you on a Mac? I'm trying to follow your sound pathway and I can't. You should have one device doing the A to D and that plugs into the computer for recording. Plug the headphones into the computer and set Audacity to let you hear the show. I think you have way too many boxes and cables...

Which Windows?
Do you know if the device uses ASIO software or drivers? Audacity doesn't get along very well with ASIO software. If you're in Win7, you should go straight up and see if there are any driver or software updates. Audacity supports the Windows drivers just fine.

The problem with doing the TextEdit thing is TextEdit's insistence on folding lines. You may need to solve two problems. Audacity 1.2 is not supported on new Macs. Sometimes it doesn't run at all.
