To address your other point, yes, you can monitor by plugging your headphones into an analog mixer which allows monitoring before the computer gets to chew on the sound. They should. Look on the side of the box. DVD-R and CD-R are the two common formats. You may have to dig through the other formats, but as long as it says those two, you should be good to go. That peak flattening is most unusual in a sound file and creates very bad distortion.
