If you don't have admin privileges, how did you get Audacity to work? The latest lame, for example, that I know of won't install without admin.

Depending on how Audacity crashes, it could explode in a cloud of sparkly debris instead of perfectly numbered captured segments. Next time the Export dialog opens up, try exporting to the Desktop. Also you may have installed Audacity a little funny. It's not supposed to be in /Volumes/Audacity. That could be part of the problem, too. And lastly, are you typing on an Intel Mac with OS-X 10.5 or later? Those Macs do not support...

You only get the analog Line-In option if your laptop actually has one. Most Windows laptops don't. That's why you bought the UCA-200.
You get an actual analog Line-In with a Mac or larger Windows deskside machine. Windows laptops typically only have analog mono, low level, Mic-In.
