If you're on a modern Mac, you should be in Audacity 1.3.12. The older 1.2 has significant problems.

In general, any time you press Stop at the end of a recording and then press Record, Audacity should start a new track underneath the old one. Since the performer is generally paid far more and or have higher stature than the sound guy, the sound guy would go in favor of one that knew how to record live performances. It's far more difficult than anyone thinks.

In each case it gives you control. The top quality software for phone interviews gives you the option of recording you on Left and the far voice on Right so you can apply editing, effects, and corrections to either voice by itself in post production.
