If you bought the music relatively recently, then the songs do not have copy protection and you can do this... iTunes > Preferences > CD Import Settings > MP3 Encoder. Select the song and Advanced > Create MP3 Version. You can select multiple songs by holding the shift key. Drag those out of iTunes ...

The only safe way to do what you want is to Export stand-alone sound files and use those for production. They have no historical baggage to worry about.

Audacity does not support multiple Projects at once. Multiple windows in one Project, yes, but not two different Projects. What you're trying to do is modest magic. MIDI is not sound. MIDI is machine instructions how hard to strike a piano key and for how long. It has nothing to do with the sound the piano key makes. Software somewhere has to convert that instruction set using internal instruments to music and then save...
