This is not a Post Production/Noise Removal problem. You will never get rid of frying noises without damaging the show, so we need to find out where the noise is coming from and get rid if it in Pre Production.

The PFA seems to be the answer, but I can't get quite enough information to be sure. It starts talking about channels and needing both XLRs to have Broadcast Phantom Power to get a stereo show to work. But the illustration is for one mono microphone... ?

No. As you found, your job is serious surveillance software and since that's not a popular product, it's expensive. Yes, surveillance is the other place where you can record and play with no relationship to each other. TiVos and DVRs do that. My EyeTV off-air tuner and DVR software can do that, too....
