Restarting Windows should tell the system that your turntable is no longer there. If that fails, you can go into Windows Control Panels and select the new sources and destinations. Rebooting should do it.

You can get there by exporting as WAV and importing into iTunes set for ALE encoder.
I can't find it either. I was half-way expecting Quicktime Pro to be able to do it, but not so far.

The Wiretap I have has a preference where you can tell it not only to use AIFF, but 16-bit, Stereo. You should check that. We're not quite sure of your direction. Reducing the size of the WAV file is pretty simple, but you can't do it with audio filters. Also, what kind of noise are you making?
