I tried this on a more modern machine and my Quicktime INFO datarate is 1535.96 kbp/s. Let's crank through the numbers. Which OS-X, which Audacity version, what machine, which iPod? None. It's the same thing. I just did your exact test with my iPod and an .aiff file and it worked fine.
Is the aiff file produced by Switch 48000, too? My test was with 44100.

Audacity makes terrible archives. Any time you have valuable work, Export As WAV immediately and make a safety copy of the file(s) on a thumb drive, external hard drive, or backup system. What are you doing that requires that many tools? That's the tool list required for a very badly damaged, irreplaceable recording, not one that you produced live under carefully controlled conditions.

Before you pull the songs into iTunes, Open one with QuickTime Player and Command-I Info panel. Does the INFO panel look anything like that? Your 48000 may say 44100 instead.
