And also, you know that iTunes has its own volume control different from the main Mac one right? When you're recording, you don't use that one.

Less that what? What are you comparing it to?the volume is significantly less...
And which one of the capture processes did you use? The analog one or the USB digital one? Many USB turntables can do both.

You can see the hard drive activity light, right? If you start a recording, you should get a light at the beginning and then a flash about every five or ten seconds as Audacity writes the show to the disk. Never use Audacity Projects for Archive. As you're finding out, you can't easily move a project -- particularly if it's complicated. Export As WAV and archive those. I'm going with Noisy and Difficult. If you have a damaged voice track with broadband hiss, it's almost impossible to remove the noise during each spoken word. The noise signal will appear to pump and swish with the vocals. You can certainly take the noise out from the words, too. That's the setting ...

I've used Audacity for several years now and have never seen this problem. You were lucky. The second track has no sound, yet I can see its waveform. Open the aup file in any text editor and read it. The first or second line of text should tell you what the original filenames were.
