If the coder left behind metadata inside the file, then you win. Sometimes you can read those with a data ripper or viewer. Most don't and the inspection software tries to derive the information from what's there. That's only a guess.

You open up effects from the main Audacity editing window. Open a show and Effect > Change Tempo, for example. Your new effects, if Audacity accepts them, should appear at the bottom of the list.

Did you read the tutorial?
Audacity will not "Save" a sound file. You have to Export one. There's a number of steps to this, configuring Audacity, Splitting up the sound files into songs, etc. It's all covered.

Oh, and forget MP3 unless you want the work on your iPod or other music player. Audacity capture at 44100, 16-bit, stereo is directly compatible with Music CDs. MP3 creates permanent compression sound damage.

While you can force AAC to have multiple audio channels, it's most often used as stereo. You can manage stereo AAC with the FFMpeg software plugin. Dolby® AC3 is the one with the 5.1 encoding and Audacity does not have a Dolby® decoder. I don't know that it can handle DTS or WAV6, either.
