This may be where history is important. Did you Install Win7 or did you "upgrade" to Win7? Did the original machine have Audacity 1.2 on it before you upgraded? Flesh this out. We need to taste and feel your machine since it's obviously confused.

And just because you didn't specify, you can do amazing things to older 78s by using the right needle. LP needles are smaller than ones needed for 78 and they ride on the bottom of the 78 groove picking up every dust mote and cat hair. Try turning off Dithering in the Audacity preferences. It's always a danger sign when people complain about this because dithering "noise" is really , really tiny. What is the show level that it's destroying your work? If the show capture, the project specifications and the export are the ...

I don't like those controls. They're a little magic.
Split the track and use the Envelope Tool on one of the tracks to dip the volume as needed. It's less useful to boost the volume. Then Make Stereo Track and Export.

As we have said multiple times, Stereo Mix is a dance between Windows, the Sound Card itself and the Software Drivers. The drop-down menus in the panel to the left of the blue waves has provision to split, assign, and then recombine tracks. Do this before you Export Multiple.
